If you plan to play 24/7 then yes, you'll probably have to play more than 1 character. However, there are ways to recover adventure coins faster (being Tera Club, buying Haste Coins from vanguard supply and you also get coins sometimes from twitch codes)
That's probably the easiest way out if you want to spam endgame dungeons 24/7 for profit. You can also use tokens that you get for helping rookies to replenish it and right now wintera has a chance to drop those tokens too.
There are also many side activities that don't require coins to play and pvp, but probably not what you look forward to as a pve priest in case you're going for that approach.

Pvp is fine too. I just don't play mmorpgs to go solo, there's singleplayer games 4 that. Leveling up is already a chore like alwaysss.

If you're not in a rush or want an alt for farming, there will be a leveling up event at the end of this month scheduled to start on the 28th.
However, leveling as of now is the fastest it's ever been (besides plevel days where friends could help each other).
Even as a healer you could be soloing dungeons up to level 65 and it'd be faster than waiting for the event, but I'd rather wintera now to stack up on coins and take advantage of the event later on.
Pvp is fine too.
Healers are much needed in pvp content, so if you're available to play during the evenings around 8pm on weekdays then you should not run out of content anytime soon.
For extra activity consider joining a guild to go to Civil Unrest on Sundays then you'll find group content easily too.
Also if you don't mind adventures you can try your luck in LFG and instance matching with the resets you get from the coins.

If you play the game casually (something like 2-3 hours a day) then this coin system should not be an big issue. The coin system is a little bit better than what we used to have before, with its owns cons tho, however if you are planning on playing the game more hours per day then it will become something you may get annoyed. For this is good to know which content you can run with Adventure Coin system and which content doesnt need it. Most dungeons, solo or party, will need a certain amount of them while battlegrounds (pvp content) wont need them at all. We have few open world content like Guardian Legion missions, Fishing, World Bosses hunt and other almost irrelevant stuff.
To sumarize:
1.- By game design you probably will need two or more characters but thats up to you.
2.- Healers and Tanks are always on demand so you may have an advantage there as dps population is huge compared to them.
In my experience of a player going away and back again from the game, the dungeon limitation was always an issue.
As a casual, you will find yourself out of coins and needing a 2nd and 3rd toon everytime you have a spare time, like weekends. And for a casual it's a great issue, because u barely will have 1 toon in "endgame" equipments. Wich will make you have to run your alts only on low dungeons and get frustrated due to lack of needed drops for your main gear, or even low profit.
The game should not limit how much we want to play with our characters.
The tank and healer problems are partially due to it, casuals can have 1 endgame toon, more than that is an exception, and if they are a tank - like me - or a healer, this will means that your endgame party will have them for like 5 (or less) runs on a weekend or holiday.
